Protein solubility is a measure of how much of the protein can be dissolved in a given solvent under specific conditions, such as temperature, pH, and ionic strength. The solubility of a protein is influenced by a variety of factors, including the protein's amino acid sequence, size, shape, charge, and hydrophobicity. In general, proteins are most soluble in a solution that is close to their isoelectric point (pI), which is the pH at which they have a net charge of zero. Protein solubility is important in various applications, such as protein purification, formulation of pharmaceuticals, and production of food and industrial products.
