This D-Ala-AMC is a fluorogenic aminopeptidase and endopeptidase substrate used for the detection of enzymatic activity of microorganisms collected from the surface of aerobically cold-stored pork and beef. It might be useful for for rapidly assessing the microbial quality of refrigerated meat.
